Củ năng gọt vỏ, rửa sạch, cắt hạt lựu. Sau đó, ướp củ năng với 1 muỗng canh đường trắng khoảng 5-10 phút cho ngấm.
Sau khi ướp, trộn đều củ năng với bột năng sao cho bột bám xung quanh. Rây củ năng qua rây để loại bỏ bột dư thừa, cho ra đĩa.
Bắc nồi nước luộc củ năng. Nước sôi cho củ năng vào luộc chín. Khi lớp bột bám bên ngoài củ năng trở lên trong suốt thì vớt ngay ra thả vào bát nước lạnh. Thời gian luộc chỉ từ 1.5-2 phút. Không nên luộc lâu quá lớp áo bột bám bên ngoài củ năng sẽ tan mất.
Xoài chín gọt vỏ, 1/2 cắt miếng nhỏ, 1/2 còn lại cho vào máy xay sinh tố cùng sữa tươi không đường, 1 muỗng canh đường trắng, xay nhuyễn.
Cho xoài cắt miếng, củ năng vào ly hoặc chén. Đổ phần xoài xay vào, trộn đều và thưởng thức.
